Store in a closed paper bag on the kitchen counter. - Beyond that:
Freeze it, it freezes perfectly. Pre-slice before freezing, for convenience. Toast a slice straight from the freezer for perfect crunch. Ideally, freeze it in a plastic zip-loc bag. - Never refrigerate.
Sourdough bread and fridge are not friends. It'll dry out, and lose its magic.
