It is stone ground and then finely sift a special blend of hard red spring wheat and hard red winter wheat to make this very versatile flour. The fine sifting produces a soft, pillowy texture that's perfect for the crackling crust and open crumb of baguettes, boules, and other traditional artisan breads.
